In Latin America, the leading health risk employees face is Dietary Risk: high carbohydrate consumption, with low levels of fiber and vegetable consumption. Food, of course, is one of the best things about life, and our diets are often heavily influenced by culture—and the ingredients that were readily available to our ancestors. Empanadas, arepas, asado, pupusas, and tacos are all wonderful dishes, but balance is key to anything in life. Perhaps the challenge isn’t the food our ancestors ate, but the food we eat to accommodate our work schedules.
